  1. Preparation of nachos
  2. 100 g Wheat flour
  3. as per taste Salt
  4. 3/4 tsp Mexican seasoning/ pizza seasoning
  5. as requireda Water
  6. As needed Oil for deep frying
  7. For preparation of salsa
  8. 1 onion
  9. 1 tomato
  10. 1 fresh green chilli
  11. 2-4 cloves garlic
  12. leaves Coriander
  13. leaves Mint
  14. to taste Salt
  15. 1/2 tsp Sugar
  16. 1/2 tsp cumin powder
  17. For Mexican rice
  18. 150 g raw rice (cooked)
  19. 30 ml oil
  20. 7-9 cloves garlic
  21. 1 onion chopped
  22. 1 carrot (small)
  23. 7-8 French beans
  24. 1 capsicum (small)
  25. 1 tomato deseeded and chopped
  26. 1 tomato pureed
  27. 2-3 fresh green chillies
  28. 1/2 cup blanched sweetcorn
  29. 1/2 cup boiled kidney beans
  30. to taste Salt
  31. 1/2 tsp black pepper powder
  32. 1 tbsp pasta sauce (optional)
  33. 1/2tsp- 1 tsp Mexican seasoning
  34. 1/2 tsp coriander powder
  35. 1 tsp cumin powder
  36. as required Cheese for garnish

Instructions to make to make Mexican rice

  1. For homemade nachos:
    In a mixing bowl, put flour, salt, black pepper and Mexican seasoning. Mix all well. Next add water and make a tough dough.
    Next roll out the dough portion into a thin roti. Poke with a fork so that it doesn't puff up while frying.
  2. Now heat a tawa and roast the roti. Next cut the roti into triangles.
  3. Now deep fry the triangles till they are nicely crispy. Strain and keep aside.
  4. Next prepare salsa:
    If you like you can smoke the onion, tomato and garlic and then make the salsa else you can make it raw too.
    In a blender jar put all the above-mentioned ingredients for salsa and blend coarsely.
    Salsa is ready. Keep aside.
  5. Next start preparing Mexican rice.
    Heat a pan with oil.
  6. Put garlic, green chillies and onion. Saute. Next add french beans, carrot, salt and pepper powder.
  7. Mix all well and cook for sometime. Next add capsicum. Cook for some more time. Next add sweetcorn, kidney beans, chopped tomato, chopped coriander leaves, pasta sauce and Mexican seasoning. Mix all. Next add pureed tomato, coriander powder, cumin powder.
  8. Mix all well and cook till tomatoes loose their rawness. Next add the cooked rice.
    Mix all well. Let it be on flame for sometime.
  9. It's ready...
    Transfer into a serving plate. Grate cheese generously. Put the prepared salsa and break and put some nachos for the crunch. Arrange nachos on plate and serve hot...
