  9. 2 green chillies
  10. 8-10 mint leaves

  14. For boiling the meatballs
  15. 1 litre water
  16. 1 stick cinnamon
  17. 1 bay leaf
  18. 1 green chilli
  19. 3 green cardamoms
  20. 1 black cardamom
  21. 1/2 inch grated ginger
  22. 8-10 mint leaves
  23. 1 tbsp desi ghee
  24. 1 tsp cumin seeds
  25. 1/2 tsp salt
  26. For the gravy
  27. 400 gms curd
  28. 1 cup mutton stock
  29. 1 pinch haldi(turmeric powder)
  30. 1 tsp ginger powder
  31. 1/2 tsp saunf powder
  32. 1 tsp chilli flakes
  33. to taste Salt
  34. 3 tbsp ghee
  35. 6-8 cloves garlic, chopped
  36. 2 green chillies
  37. 1 tsp white sesame seeds
  38. 8-10 mint leaves

Instructions to make to make Gushtaba

  1. In a mixer first grind the green and black cardamom, cloves, peppercorns, green chillies and mint. Then add the mutton mince, saunf powder, ginger powder, ginger garlic paste, salt and egg. Grind to get a smooth paste. Set aside.
  2. In a vessel take water. Add salt, ghee, cinnamon stick, cardamoms, bay leaf, cumin seeds, green chilli, mint leaves and grated ginger. Bring it to a boil. Once the water boils for a good 10 minutes, strain it and again put on the stove top. Make balls of the mince with wet hands. Add in the hot water and cook for 15 to 20 minutes. Remove the meatballs and reserve the stock.
  3. Heat ghee in a vessel. Fry the chopped garlic till golden brown. Remove and set aside. Beat the curd well. Pour it in the hot ghee stirring constantly. Add 1 cup of the stock. Mix well. Add ginger powder, saunf powder, chilli flakes, haldi and adjust the salt. Bring to a boil. Cook till the gravy reduces to half and thickens a bit. Add the meat balls and cook on low flame for 10 to 15 minutes. Add the mint leaves and green chillies and mix well.
  4. Garnish with fried and crushed garlic, sesame seeds and chopped green chillies. Enjoy with paratha or tandoori roti.
